Baked Creekside Camembert

Here’s my all time favourite recipe for our Camembert baked with sundried tomatoes and fresh basil:

Baked Creekside Camembert

Ingredients

  • 1 Creekside Camembert wheel, approx 250g

  • 2 large cloves of garlic

  • 1/2 cup oil-packed sun-dried tomatoes, finely chopped

  • 1/4 cup balsamic vinegar

  • 3 tbsp chopped basil

  • 1/4 tsp ground black pepper

Instructions

  1. Preheat oven to 375F

  2. Mix together topping ingredients. I like to marinade them together for a few hours before using, but you can also prep right before baking as well.

  3. Place Camembert in a small baking dish or cast iron skillet. Slice a shallow grid in the top of the wheel of Creekside Camembert to help the topping flavours better meld with the cheese.

  4. Top with mixture of tomatoes and herbs and seasonings, then bake for approx 10 mins, or until cheese is soft and starting to melt.

  5. Serve with warm crusty baguette or crisp crackers. Enjoy!
