Bone Broth Recipe

Beef Bone Broth

makes 6 4-cup portions

recipe doubles/triples well if you have a very large stock pot

2 lbs Creekside organic beef bones (ON SALE while supplies last)

1 medium onion, quartered, peel on

4 cloves garlic, cut in half, peel on

2 carrots, cut into thirds

4 stalks celery, cut into thirds

1 Tbsp whole peppercorns

handful of fresh herbs: I use rosemary, basil, thyme, parsley, sage

splash of red wine or apple cider vinegar (the acid helps to pull more nutrients from the bones)

NOTE: I do not add salt to my broth but season it accordingly when using.

water - about 6 L to cover bones.

DIRECTIONS:

Preheat oven to 425F. Season bones with salt and pepper and a sprinkle of dried herbs if you wish. Roast for 45 mins to 1 hr until bones are well browned.

Add bones to large stock pot or instant pot, along with any drippings. Add remaining ingredients to pot.

Stove top directions: Bring pot to a simmer, then reduce heat until just barely simmering. Bubbles should not break the surface. Cook over low heat until desired depth of flavour is achieved. When I make stovetop broth I will cook for 36-48 hours. (If you feel comfortable with leaving your stove on for that long! but even 14-16 hours of cooking will give you a delicious broth) Cool broth quickly by placing pot in a sink of cold water (refresh occasionally), then freeze broth in canning jars or large ziploc bags (leave headspace for expansion while freezing!) Use in any recipe that calls for broth or stock - you may wish to use less broth than the recipe calls for and add some water - this makes a very hearty broth!

Instant pot directions: cook under high pressure for 12 hours. I usually start cooking in the late afternoon, then add another 6 hours to the instant pot when we go to bed. Proceed with cooling and freezing directions as above.

Making this with chicken? The same directions apply; just substitute chicken bones (and feet if you want) and switch out the red wine for white wine.
